Job Description
This luxury award winning wine estate on the way to Franschhoek boasts a unique culinary offering with a modern and spacious restaurant offering a choice 5 or 7 course tasting menu. The recently renovated and high-tech Tasting Centre offers imaginative wine pairing tastings along with their signature wines from the estate. ProStaffSelect are in search of a talented SENIOR / HEAD PASTRY CHEF to handle daily production of all courses offered on this ultra-modern, multi-component dessert menu. REQUIREMENTS: Formal Professional Culinary & Patisserie Qualification. Minimum 4 years experience RUNNING YOUR OWN Pastry Department. Experience in designing, costing and training up staff for new menus (all seasonal except restaurant menu which changes weekly). Wide range of Plating styles and use of multiple components. Ability to train, motivate and disciple junior staff. Highly proficient in computers with specific reference to Back of House & Stock Controls. Proven skills in ALL PASTRY techniques including Patisserie, Baking, Desserts, Sugar & Chocolate work. JOB OUTLINE: Manage and supervise a team of 2 junior pastry chefs. Coordinate daily requirements for the restaurant and wine tasting room. Oversee production and mise en place to the FINE DINING standards required. Involved with and the control of plated desserts, bread production and all pastry production. Scheduling and monitoring of staff shifts, working hours, overtime and annual leave. Liaise with suppliers, place orders and handle kitchen admin, stock take and staff meetings.
