Job Description
Offering ultra-modern cuisine, fresh & trendy plating, and an eclectic fusion of flavours, this 86-seater modern and contemporary wine estate restaurant focuses on monthly changing menus comprising three, five or eight tasting menu options. The restaurant also offers a trending lunch menu featuring a selection of their signature dishes paired with wines. ProStaffSelect are in search of a highly skilled and talented PASTRY CHEF DE PARTIE to manage their own dessert department. Pastry production includes a few daily baked breads & rolls, sophisticated competition standard plated desserts as well as small size / mini cakes & desserts for wine tasting, function canapes and private events under the trees. The main menu dessert items are changed regularly, requiring innovative ideas with a range of hot and cold desserts. REQUIREMENTS: 2 or 3 year recognized professional pastry / culinary qualification 3 years industry experience within 5-star hotels or Fine Dining Pastry Environments Extensive range of experience in BAKING, PATISSERIE and CONFECTIONERY Previous experience in effective food cost controls Take charge of your own pastry section with one Trainee assisting Strong outgoing personality with exceptional people skills to liaise directly with guests Comfortable creating new desserts Strong organizational, planning and administration skills Multi-tasker, creative and innovative thinker who’s willing to lead by example Strengths in Stock Controls, Recipe Development & Costing, Budgeting and Finances Strong computer proficiency in Point of Sale Systems as well as Word & Excel Additional: Salary negotiable for highly skilled candidates Permanent appointment
